Melt in your mouth chicken breasts

THE SECRET IS IN THE MAYONNAISE



Ingredients:


4 boneless chicken breast halves

1 cup mayonnaise

1/2 cup freshly grated parmesan cheese

1 1/2 teaspoons seasoning salt

1/2 teaspoon ground black pepper

1 teaspoon garlic powder


Directions:


Mix mayonnaise, cheese and seasonings.

Spread mixture over chicken breast and place in baking dish.

Bake at 375°F for 45 minutes.

An unusual yet delicious combination

"Where Mom's secrets never have to remain secret..."


PLANTAIN & GREEN FIG PIE



This recipe is one of Mom's delicious creations...a MUST try...

INGREDIENTS

1 lb green fig
1/2 lb semi ripe plaintains
2 cups grated cheese
1 cup butter
1 onion
2 tbs mustard
3 finely chopped pimentos
1/4 cup finely chopped celery
1 tsp black pepper
1 tbs chilli flakes
1 tin carnation milk
1 cup bread crumbs

METHOD

Place chopped green fig and plaintains in boiling water. Boil until semi soft and then strain.

In a bowl smash boiled green fig and plaintains together and then add all other ingredients.

Mix all together and then place in a baking tray.

Sprinkle cheese on top together with the bread crumbs.

Place in a 350 degree preheated oven and allow to bake until golden brown.


Serve warm..

Flaky, Buttery Croissants

To make the dough:
1 cup (250 ml) cold milk  

1/2 cup (125 ml) boiling water 

1 tbsp active dry yeast 

1/4 cup (50 g) sugar 

3 3/4 cup (500 g) all purpose flour 

1 tsp salt 

1 cup + 2tbsp butter, frozen, then left at room temp. for 20-30 minutes




Method:

1. Pour the milk and boiling water into a large bowl. Stir in the yeast and sugar, leave for 5                minutes until frothy.

 2. Add in the flour and salt, incorporate it with your hands into a shaggy ball.

3. Tip the contents out onto a clean work surface and knead until you’ve incorporated all the           flour (this should only take about 2 minutes). Place the dough into an oiled bowl, and leave in     the fridge to rest for 1 hour.

4. Disperse the butter, and flatten into a rectangle, roughly 8″ x 5″. Fold up in the cling film and       pat together well. Refrigerate for 30 minutes.

5. Once the butter has been chilling for 25 minutes, tip the chilled dough out onto a lightly floured     work surface and roll into a 16″ x 10″ rectangle.

6. Unwrap the chilled butter block and place into the centre of the dough. Fold the dough into thirds over the butter. Seal all the edges by pinching the dough together.

7. Rotate the dough 90 degrees, use the roiling pin to make regular indentations in the dough.

8. Roll into a 15″ x 10″ rectangle. 

9. Fold into thirds like a business letter. Wrap the dough in cling film, and refrigerate for 1 hour.       (steps 8+9 = ‘one turn’ of the dough)

10. Remove the dough from the fridge, unwrap and complete 1 turn (i.e. repeat steps 8 + 9).             Re-wrap in the cling film, refrigerate for 1 hour. 

11. Repeat step 10, two more times, so you have done a total of 4 turns. 

12. Cut the dough into quarters. Wrap the quarters tightly in cling film and refrigerate for 8-12            hours. 


Shaping the dough:

Remove one piece of dough from the fridge, unwrap it, and roll out on a lightly floured surface into a 16″ x 6″ rectangle. Cut into thirds, forming 3 smaller rectangles. Cut each of these rectangles in half diagonally forming 6 triangles.

Take one triangle of dough (I recommend putting the others in the fridge while you shape each one). Pull on the corners of the shortest edge, to even up the base of the triangle. Then gently stretch the dough a little

Cut a small slit in the base of the triangle, stretch it, then roll the dough up.

Place it, tip side down, onto a lined cookie sheet. Repeat with the rest of the triangles, placing them 2″ apart.


Bake: 

Cover loosely with cling film and leave to rise in a cool place for around 2-3 hours ( if you’re making these the night before, you can actually shape them and leave them to rise in the fridge overnight instead). Once ready to bake, preheat the oven to 450 degrees F (22o degrees C) . Brush the croissants with beaten egg using a pastry brush and put into the oven. Immediately lower the temperature to 400 degrees F (200 degrees C), and bake for 10 minutes. Reduce the temperature to 350 degrees.

Allow to cool...

Makes lovely sandwiches..

Gum stuck in your Child's hair?

I remembered shivering in by boots walking home from school of having to explain to my Mom how gum got stuck to my hair..I thought she was going to cut it all off!


All she simply did was take a bit of mayonnaise and rub it around the gum with her fingers and gently slid it down the strands of my hair.

AMAZING ISN'T SHE!

Yummy Mango Smoothie

Then make it into an irresistably and delicious Smoothie!

Check out my Mom's Recipe for Mango Smoothie...So yummy it brings out the inner child in you..


Ingredients

1 cup chopped ripe mango
1/2 cup low-fat milk
1/2 cup ice
1/4 cup plain low-fat yogurt
1 tablespoon honey
1 tablespoon vanilla essence


Directions

Place the mango, milk, ice, yogurt, and honey in a blender.
Blend until smooth and frothy.


Substitute mango with your favourite fruit...!

Tuna Sandwich Paste

Growing up, I would always get so excited when my Mom made Tuna sandwiches for my brothers and I to take to school. I remembered when my friends would gather around just to have a taste of that delicious tuna paste.

Now I make it for her instead...


IT'S SOOO GOOD...It's a must have recipe

INGREDIENTS

1 tin Tuna chunks/flakes in vegetable oil (Preferably Bumble bee Brand)
1 tsp of black pepper
1 tsp of sugar
1 tsp of mustard
1/8 cup finely chopped onion 
1/8 cup finely chopped celery
1/8 cup finely chopped sweet peppers
1/8 cup finely chopped pimentos
1/4 cup mayonnaise


METHOD

Strain vegetable oil from tuna ensuring that most of the oil has been pressed out.
In a bowl mix all dry ingredients together with tuna.
Add pepper to taste.

Spread on to your bread and its ready to eat..


SO simple yet insanely delicious...

Lemons

Harness the power of citrus to clean your microwave.

My Mom came up with this superb idea to cut a 

lemon in half, squeeze the juice into a small bowl of 

water, add both lemon halves and place in the 

microwave for five minutes. She said that the fresh 

scent eliminates cooking odors and more importantly, 

the condensation from the steam loosens random 

splatters that have hardened. 

I've tried it...and it really works!!! Simply wipe away 

the loose stains with a damp cloth.

A Recipe for keeping Lettuce Fresh and Crisp

Do you buy lettuce at the store with the intention of making salads, forget about it and then find a wilted mess in your refrigerator a week later?

Mom says, "place a metal fork inside a bowl of water with your wilted lettuce and in a matter of minutes your lettuce will be as good as new...fresh and crisp and ready to be eaten."
